The Novy Svet champagne factory was founded in 1878 by Prince L.S. Golitsyn, the founder of Russian industrial winemaking. Although sparkling wines of the type champagne had been produced in the Crimea long before Golitsyn, it was only an imitation of French wines. But he not only achieved quality (and a stable one at that), but also gained international recognition at the highest level.

A bright building in the style of a medieval castle, crowned with four towers, was built by L.S. Golitsyn for the employees of the winery. He himself and his family lived in a separate He and his family lived in a separate house (the house has been preserved), and one of the buildings (next to the "castle") was occupied by his museum, where various valuables and rarities related to winemaking were kept. К Unfortunately, almost nothing of Golitsyn's unique collection has survived.

However, the current Museum of the History of the Champagne Winery gives an idea of the Prince's extraordinary personality and the main business of his life - the production of champagne.
